‘Casey Jones’ Chicken + Noodles


‘Casey Jones’ Chicken + Noodles

What To Use

2 Tbsp Infused Butter (try Casey Jones for an infusion)
3/4 lb Boneless, Skinless Chicken Breast (cut into small pieces)
1/3 Cup Onion (finely chopped)
14 oz Chicken Broth (I love the Pacific brand)
12 oz Egg Noodles
10 oz Peas + Carrots (chopped)
10 oz Cream of Chicken or Mushroom Soup
3/4 Cup Milk or Milk Substitute
3/4 Cup Parmesan Cheese (shredded/grated)

Let’s Get To It!

Heat oil in a large pan over medium heat.
Add in the chicken and heal all sides.
Add onion and carrots.
Continually stir.
Cook until chicken is no longer pink (usually around 5 minutes).
Add chicken broth.
Heat to boiling.
Stir in uncooked pasta and peas.
Stirring pasta and mixture until evenly coated with broth.
Heat to boiling.
Reduce heat.
Cover.
Simmer on medium heat for around 10 minutes.
Stir occasionally.

In a medium sized bowl stir together until smooth:
Milk
Cream of Chicken Soup
1/2 Cup Parmesan Cheese

Stir into the pasta mixture.
Simmer until heated through.
Serve sprinkled with parmesan cheese.
